Claypot Rice

Using microwave to cook Claypot rice is so easy & fast



Ingredients:

1 1/2  cup rice
250g  chicken wings
20g    salted fish (sliced)
1        chinese sausage (sliced)
3        mushroom (shredded)
1        knob ginger (sliced)

Marinating ingredients:
1/2 tsp light soya sauce
2    tsp dark soy sauce
1/4 tsp high grade soya sauce
1 tsp    oyster sauce
1/2 tsp sesame oil
1/4 tsp salt
1 tbsp  ginger juice
2    tsp wine
dash of pepper

Method:
  1. Season chicken with marinating ingredients for 30 mins.
  2. Fry ginger, sausage and salted fish together with 1/2 tbsp oil on high power for 2 mins, uncovered.
  3. Add rice, mushroom and marinated chicken except sauce and fry for 3 mins, uncovered.
  4. Finally add remaining sauce, together with 1 1/2 cup water, cook on high power for 15 mins, covered.  Stir in-between cooking time.  Garnish with fried shallot.
  5. Add some BBQ pork on top.
