Red Bean Bun

  Another simple bun....


Ingredients:-
A
300g     Bread flour
36g       Castor sugar
1/2tsp   Salt
18g       Milk powder
4g         Instant yeast

B
150-180g   Cold water
24g             Egg

C
48g       Butter

Filling:
Red bean paste 
 
Method:-
  1. Mix ingredients (A) together.  
  2. Using a stand electric mixer, add in ingredient (B) gradually, knead till they form a dough.  
  3. Add in (C) and continue kneading till the dough does not break when pulled to perform window test. 
  4. let it proof for around 1 hour.  
  5. Divide the dough to 50g each, roll into a round ball, and let it proof for another 15 minutes.  
  6. Flatten each ball and roll out into a circle with a rolling pin, put some fillings and wrap to form a ball.  
  7. Spaced out the dough on the baking tray and press down the dough by putting a baking sheet on top of them.  
  8. Proof again for 60 minutes.  
  9. Transfer the baking tray with the pressing baking sheet on top to the oven.  
  10. Bake in preheated oven at 210'C for 12 minutes.
