Nutella Cupcakes with Chocolate Nutella Frosting

My elder daughter made these sinful cupcakes for her classmates.






Ingredients:
200g cake flour
1tsp baking powder
Pinch of salt
125g unsalted butter, softened
200g sugar
2 large eggs
125g milk
125g Nutella

Nutella Cloud Frosting
Yield: Enough to generously frost 12 cupcakes

Ingredients:
227g unsalted butter softened, but cool
190g icing sugar
2 tsp vanilla extract
125g premium bittersweet chocolate, melted and cooled slightly
100g Nutella
1 tsp milk
pinch of salt

Directions:
1. Preheat oven to 180C. Line two cupcake trays with cupcake liners.

2. In a small bowl, combine the flour, baking powder and salt.

3. In a large bowl of an electric mixer, cream the softened butter with paddle attachment on medium high speed until smooth about 2 minutes. Add the sugar gradually and beat until fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Add in the Nutella and mix until Nutella is thoroughly mixed. Add half the flour mixture and half the milk and mix. Add in remaining flour mixture and milk and mix until batter is smooth.

4. Pour batter into cupcake liners about 2/3 full. Bake for approximately 15-20 minutes.

5. While cupcakes are cooling, make the frosting. In a bowl of stand mixer fitted with paddle attachment, combine the icing sugar and butter and beat on low speed for about 1 minute.

6. Add vanilla, and beat on low speed until well combined. Add the melted and slightly cooled chocolate and beat on medium speed until smooth (about 2 minutes).

7. Add the Nutella, milk and pinch of salt, and beat on med-high speed for another minute.

8. Putting it in a piping bag and frosting cupcakes
