Chocolate snow skin moon cake

This is especially made for children whose don't really like the traditional baked mooncake.



Snow skin:
120ml water
70g castor sugar
50g melted couverture chocolate (bitter/strong)
10g cocoa powder
10g chocolate paste
20g mooncake shortening
60g gao fen

Filling:
250g chocolate lotus paste
50g chocolate crispy rice

Method for skin:-
1) Heat water in microwave for about 20 - 30 sec with sugar.

2) Add in cocoa powder and chocolate paste. Mix well.

3) Add in melted chocolate.

4) Blend shortening and gao fen till well mixed.

5) Add gao fen mixture into chocolate mixture and knead well. Rest the dough for half hour.

6) Divide dough into 25g each and wrap with 30g filling.

7) Press into mould and chill a little before serving.
