Fondant Chocolate Cupcake

Made these cupcakes with my daughter for her friend on graduation day. It was our first time using fondant. It was not a very good experience as the fondant was hard to handle but it turned out pretty decent.

 





Ingredients:
220g butter
150g sugar
3 eggs
200g self-raising flour
2 tbsp cocoa powder
100g chocolate chips

Method:-
(1) Cream butter and sugar till well combined, add in eggs one at a time then add in flour and cocoa powder. Mix until well combined and smooth.

(2) Add in chocolate chips.

(3) Scoop batter into paper cups and bake at 175C for about 25 mins. or till cooked.

(4) Leave to cool on a cooling rack.
