叉烧酥 Char Siew Pastry

叉烧酥是我最喜欢吃的其中一个点心。





Fillings:-
300g Char siew(cut cube)
1 big onion(diced)
Oyster sauce
Soy sauce
Dark soy sauce
Sugar
Sesame oil
Pepper
(2tsp corn flour and 2 tsp water )

Method:-
1. Heat up some oil, fry onion till fragrant and add in char siew.

2. Add in all the seasoning, stir well. Simmer for 3 minutes and add in corn flour water to thicken up the sauce.

3. Transfer to plate and allow to cool. Set aside for later use.

Shortening Dough:-
150g flour
25g butter
75g shortening

Method:-
Knead all ingredients to form smooth dough. Keep it into fridge till it is set. Then divide and shape each dough into 16 equal portions.

Flaky Dough:-
160g flour
30g custard powder
28g shortening
70 - 80g water
1 egg yolk

Method:-
1. Mix flour and custard powder then make a well. Put in egg yolk, water and shortening, knead evenly. Stir in flour and knead to form a smooth and elastic dough.

2. Cover and let them rest for 30 minutes. Then divide and shape each dough into 16 equal portions.

3. Wrap water dough around oil dough. Roll it out into rectangle, then roll up from the short end, repeat this step again.

4. Roll it out into a circle and wrap with the filling.

5. Egg wash and sprinkle with some sesame seeds on top.

6. Bake at 200C for 20 minutes till golden brown.
