Pumpkin Odeh Odeh

A few months ago, we had a dept Team Building in Cookyn Inc at Rangoon Road.  Odeh Odeh was one of the many dishes that we made.  The original recipe used sweet potatoes but today I replace it with pumpkin.





Ingredients:-
100g glutinous rice flour
35g tapioca flour
150g pumpkin (steam and mashed)
1 or 2 tsp of water (if necessary)
1 1/2 tsp caster sugar
1/2 tsp salt
1/2 vegetable oil

Filling:-
120g gula melaka (cut into small pcs or grated)

Coating:-
1 1/2 cup grated coconut (steamed for 10 mins)
1/2 tsp salt

Method:-
  1. Mix all the ingredients in a mixing bowl.  
  2. Add 1 or 2 tsp of water if necessary to form a soft dough.
  3. Knead the dough for a few mins until it form a smooth dough.
  4. Rolls small balls of dough then flatten and fill them with half a tsp of gula Melaka.
  5. Pinch edges of dough to seal them up, then gently roll them into balls.
  6. Put the sealed balls into boiling water to cook for 3 - 5 mins.
  7. When the balls float, take them out and coat with steamed grated coconut immediately.
