Jap Chae (Korean Glass Noodles)

Jap Chae is a very common Korean side dish.  Every time when you watch Korea series, the "Ahjummas" always cook this dish.  Korean glass noodle is also called 'Dang -myeon" and It is made from sweet potatoes starch and is in grey colour. They are also gluten free and we love that springy and light texture.

Original recipe.

Ingredients:-
1 pkt     Korean Glass Noodles
1            Onion (Medium) thinly sliced
¼            Carrot
1            Capsicum (Optional - i didnt put)
8            Shiitake mushroom
200g      Sliced Chicken (original use beef)
½  pkt    Spinach
               pinch minced Gralic
1 tbsp    Vegetable Oil
¼ tsp     Salt
pinch of Black Pepper
 
 
Seasoning:-
4 tbsp        Soy Sauce
1 tbsp        Dark Soy Sauce
2½ tbsp     Sugar
1 tsp          Fried minced garlic
2½ tbsp     Sesame Oil
1 tsp          Sesame seeds
¼ tsp         Black Pepper 

Method:-
1.      Mix all the seasoning in a bowl. Put aside.
2.      Remove roots of the spinach. Wash spinach thoroughly under running water. Blanch it in boiling water on high heat for 1 min. Rinse in cold water and squeeze all the water out with your hands. Season spinach with a pinch of salt and ⅛ teaspoon of minced garlic. Mix by hand.  Leave aside.
3.      Cut carrot and onion.
4.      Boil 5 cups of water in a pot on high heat. When it starts to boil, add the glass noodles. Cook on medium heat for about 6 min or until the noodles are fully cooked and soft when cooked.  Rinse glass noodles twice in cold water. Drain all the water out using a strainer.
5.      Coat a frying pan with 1 tsp of vegetable oil. Cook chicken, onion, carrot and mushroom with a pinch of salt and a pinch of black pepper on high heat for 3 min or until the chicken is fully cooked.
6.      Add in glass noodles and the seasoning sauce on medium heat for 3 mins.  Stir frequently so the noodles don’t stick to the bottom.
7.       Serve the finished glass noodles on a plate. Sprinkle sesame seeds as a garnish (optional).
