Orange Sponge Cake

7 Eggs yolk
200g Cake flour (sieve)
2 tbsp Baking powder
100g Castor sugar
150ml freshly squeezed orange juice
150g Corn oil or melted butter

2 tbsp Orange zest

7 Egg white (240g)
100g Castor sugar
1/2 tsp Cream of tartar

1.  Pre-heat the oven to 170 deg C.
2.  Mix all the ingredients (A) until well incorporated.
3.  Add orange zest to the mixture and stir well.  Set aside.
4.  Beat ingredient (C) until stiff and able to hold its shape.
5.  Add the egg yolk batter to the white mixture gradually and fold it gently until the mixture is an even pale orange colour.
6.  Pour the mixture into the pan and bake for 40 to 45 mins at 170 deg C.
7.  When done, remove the cake from the oven, invert it on a cooking rack and leave to stand until cold.
