This is our all time farvourite. Only three ingredients used, black glutinous rice, water and sugar. When served, it is splashed with fresh coconut milk.
Ingredients:
200 gram black glutinous rice
5 pandan leaves washed and tied into a knot
75 gram granulated palm sugar (gula melaka)
10 gram caster sugar
1 small pack coconut cream
Water
Method:
- Wash and rinse black glutinous rice thoroughly. Remove any glutinous rice that floats up and sock for 1 hour.
- Fill half the pot with water, add pandan leaves and black glutinous rice to boil.
- Turn the heat down to medium low and keep stirring every 10 minutes to prevent the rice from sticking to the bottom of the pot.
- Cook until the black glutinous rice is soft and mushy. Take about 1 hours.
- Add gula melaka and stir until it is completely dissolved.
- Add caster sugar to taste
- Serve while it’s still hot in a bowl and top with a few spoonfuls of coconut cream.
